Vegetable Stir Fry with Lentils
This Vegetable Stir Fry with Lentils is a vegetarian based meal but you can add your protein of chicken or
pork and it is such a tasty meal. Add your favorite variety of vegetables.
- 1 cup dried green lentils
- 2 cups vegetable broth
- 1 tablespoon sesame oil
- 1 red bell pepper, sliced
- 1 cup broccoli florets
- 1 cup sliced carrots
- 1 cup sliced mushrooms
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon grated fresh ginger or ginger garlic

- 2 cloves garlic, minced
- 2 green onions, chopped (for garnish)
Instructions
In a medium saucepan, combine lentils and vegetable
broth. Bring to a boil, then reduce heat and simmer for about 15-20 minutes or
until the lentils are tender and the liquid is absorbed.
In a large skillet or wok,
heat sesame oil over medium-high heat. Add the sliced bell pepper, broccoli,
carrots, and mushrooms.
Stir-fry for 5-7 minutes or until the vegetables are tender-crisp.
In a small bowl, mix soy sauce, rice vinegar, grated ginger, and minced garlic.
Add the cooked lentils and the sauce to the stir-fried vegetables. Toss everything together until well combined.
Serve the lentil and vegetable stir-fry garnished with chopped green onions.
